But for me, it all goes back to a little shack of a bar in Cabo San Lucas—long before the cruise ships and resort chains turned the sleepy fishing town into a tourist destination.

A Cabo Classic

Poncho, the bartender at this hidden gem near the marina, had a standing deal with me: if I brought him a couple of fresh mahi-mahi from my morning fishing trips, he’d pour me the remnants of whatever cocktails he was mixing for tourists.

The true reward, though, wasn’t the leftovers—it was the margarita.

Poncho’s specialty was simple: a classic margarita on the rocks. No slush, no shortcuts—just bright citrus, crisp tequila, and a hint of sweetness. What he called a Cadillac Margarita was really his father’s timeless recipe, passed down behind the bar like a family heirloom.

Each time, as he handed it to me, he’d say:
“This is my father’s favorite recipe.”

And he was right. Nowhere in Cabo did it get any better.

A Little History in Every Sip

The exact origin of the margarita is hotly debated. Some say it was created in the 1930s for a showgirl named Marjorie King who was allergic to all liquor except tequila. Others claim it was first mixed in Tijuana or even Texas. Regardless of its birthplace, the margarita quickly gained traction as the cocktail of choice for warm-weather revelers across North America.

Traditionally made with tequila, lime juice, and triple sec, the margarita's clean, bright flavor has kept it a favorite for decades—simple, refreshing, and endlessly adaptable.

  4. Pour over fresh ice.
